Low Carb Mini Cheesecakes

Image
Low Carb Mini Cheesecakes  So the only thing I have been craving lately is… cheesecake. But cheesecake isn’t really the best when you’re trying to look good in a swimsuit. Luckily, I decided to experiment with a new recipe. These low carb mini cheesecakes were one of the recipes I gave exclusively to e-mail subscribers, but I’ve decided it’s just too good not to share. The recipe makes 5 low carb mini cheesecakes, which is perfect for just a random dessert during the week, but you could easily double it and bring it to a party or get together. It’s a new recipe for us, but I already am planning on making it for Fourth of July and Thanksgiving, that way we have some lower calorie (but still equally delicious) options at the dessert table this year. Ingredients 1 1/2 cups plain, nonfat Greek Yogurt 1 packet of Sugar Free, Fat Free Cheesecake Flavored Pudding Mix 1 cup lite Cool Whip 4 Strawberries, diced 1 cup crushed honey graham crackers ***4 ounces of cream cheese (optional) Instr...

creamy garlic herb mushroom spaghetti

Image
creamy garlic herb mushroom spaghetti  Mushroom spaghetti with a creamy garlic herb sauce? Okay, this is capital L-O-V-E on so many levels. I know – technically, this probably would have been a better fit for Meatless Monday. It’s a nice way to change up spaghetti and make it something a little more veg-friendly and, um, what’s the word? GAHHHHH? But when we’re talking about butter and garlic soaked mushrooms tossed with fresh herbs and coated in a creamy sauce all served up on steaming hot pasta – ♡♡♡ – let’s get real. That, my friends, does not need a Meatless Monday. In my world, that can happen any day of the week. This is not a new conversation around here, but I always feel the need to let you guys know: I haven’t always been a mushroom lover. This Creamy Garlic Herb Mushroom Spaghetti is total comfort food! Simple ingredients, ready in about 30 minutes. Vegetarian. INGREDIENTS 8 ounces whole wheat pasta (spaghetti, linguine, etc.) – I like DeLallo brand 4 tablespoons butter,...

Easy Balsamic Glazed Steak Tips and Mushrooms

Image
Easy Balsamic Glazed Steak Tips and Mushrooms When you usually sear meat, you don't want to crowd the pan so that the meat gets a chance to brown. With this recipe, however, crowding is a good thing. The marinade contains sugar, which contributes to browning but also can burn easily. Keeping the meat close together means that there's less opportunity for the marinade to drip off into the bottom of the pan and burn. And don't worry that the steak won't be flavorful because it doesn't brown as much — that's the job of the marinade. (Image credit: Joe Lingeman) Easy Balsamic Glazed Steak Tips and Mushrooms Serves 4 Ingredients: For the steak: 1 1/2 pounds sirloin steak tips, flap meat, or flank steak, cut into 3-inch pieces 1/4 cup tamari or soy sauce 2 tablespoons vegetable oil 2 tablespoons balsamic vinegar 1 tablespoon granulated sugar 2 cloves garlic, minced 1 teaspoon Dijon mustard 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper For the mushr...

Rosemary Roasted Pork with Maple Apple Sauce

Image
Rosemary Roasted Pork with Maple Apple Sauce Delicious leftovers This is a Donna Hay recipe and like all of her recipes it's styled beautifully and is beautifully simple not requiring a wedding guest list sized amount of ingredients. In truth this could serve 4-6 people depending on how hungry they were but I would suggest making this for 2-3 people because of the delicious leftovers. In this case, the pork actually somehow becomes _more _tender the day after and when sliced paper thinly, it is absolutely mouth watering on buttered fresh bread with a generous dollop of the apple sauce. Or you can pop it on top of a bowl of ramen or noodle soup. Your tastebuds will indeed be thankful the next day for this foresight. Mmm crispy crackling... 1.8 kg pork loin 1/4 cup rosemary 2 tablespoons sea salt flakes (like Maldon) olive oil, for drizzling Step 1 - If you have time the night before, leave the pork skin uncovered in the fridge (cover the loin though) so that it can dry out as much ...

Slow Cooker Caramel Apple Crumble

Image
Slow Cooker Caramel Apple Crumble is a delicious fall dessert recipe! Cinnamon apples topped with a crumbly oat mixture – and it’s made in the crockpot so it is super simple! Many apologies for being absent lately. I’m sure I mentioned that my husband has been in and out of the field all month and every time he comes home, we all get sick. And by “we all” I mean the baby and I. Because that’s just the kind of luck we have. I figured I’d update you on the exciting things that have happened since my last post. Most of it is about the dogs. You’re welcome. Clementine got her hair cut on Tuesday and Penelope did not recognize her. She wouldn’t let the imposter-Clem near their food for days. (If you’re new here, this is Clementine and this is Penelope.) I bought my first ever jar of Nutella on Wednesday and it was gone by Friday night. Funny thing is, I’ve never bought it before because I “don’t like” chocolate and was convinced that I would hate Nutella. Nicole made a S’Mores Frappe to com...
